What a Difference a Day Makes

After enjoying a week and a half of record breaking temperatures, old man winter has once again reared his ugly head.

Yesterday I was impressed with the storm clouds as they started to roll into the valley. The view through the silver maple in my front yard offered an eerie, foreboding glimps of what was to come. You should have seen the kids running, trying to dodge the hail stones, as the skies opened and unleashed its furry at 2:15 p.m. Exactly the same time that the school bell rang.

Last night we needed something to warm our insides, but because I had two girls that had to be at work by 5:00 I needed something quick and easy for dinner. My solution was a "semi-homemade" chicken noodle soup.
While I cut up the onions, carrots and celery, Meggan pulled the chicken from a store bought rotisserie chicken. After the veggies and bay leaf simmered for several minutes in the stock I added the chicken and some homemade noodles that I found in the frozen food section at the market. I cut up a loaf of French bread and dinner was ready in no time flat! The family gave dinner rave reviews and polished everything off! Sandra Lee has nothing on me!

  1. Why is it that it can go all day without raining and then start right at pick up time???
    That soup sounded fantastic!! You've got me thinking about making some now.

  2. I think the rotisseri (sp?!) chickens are just about the best thing ever invented! Since it's just me and my husband, I buy one and have it for dinner the first night. There's still enough leftover for my husband's lunch, a chicken Caesar salad with bowtie pasta thrown in for both of us another night, and then homemade chicken soup to send to work with my husband for another couple lunches. And everything's FAST! Your soup looks great--I'll keep that in mind as another option.

  3. Just noticed you stopped by "my place" for a visit... We've got to talk(I mean type)-- so much in common... never enough time for quilting, dinner on "the fly" and snow when we least expect (or want) it. I love your quilts....

  4. Ummm, your "semi-homemade" meal sounds yummy! And isn't that a great show on Food Network! Anything to get out of the kitchen faster and into the sewing room...

  7. We had a freaky storm here in southern Calif the other day. Luckily it didn't last long. We don't do well with rain...or anything other than sunshine. :) The soup looks good. Thanks for sharing.
